Ingredients
- 4 Pc. Lamb fillets
- 400 g Semi-Waxy potatoes
- 400 g Steamed green beans
- 1 bunch. Fresh flat leaf parsley
- 100 g Dried pickled tomatoes
- 50 g Butter,
- 50 ml Olive oil
- 5 Pc. Clove of garlic
- 5 Pc. Salt pepper,
Instructions
- Peel, grate & squeeze the potatoes. Fry four small pancakes from it in a dry pan.
- Sprinkle chopped parsley on each potato pancake.
- Salt and pepper the lamb fillet and toss in breadcrumbs. Wrap the lamb fillets in the potato pancake.
- Cook in the oven at 180 degrees C (convection) for 15 minutes.
- Heat the blanched beans in a butter / oil mixture, add the tomato pieces. Cut the garlic cloves into thin slices and brown them in butter.
