Ingredients
 

  • 4 Pc. Lamb fillets
  • 400 g Semi-Waxy potatoes
  • 400 g Steamed green beans
  • 1 bunch. Fresh flat leaf parsley
  • 100 g Dried pickled tomatoes
  • 50 g Butter,
  • 50 ml Olive oil
  • 5 Pc. Clove of garlic
  • 5 Pc. Salt pepper,

Instructions
 

  • Peel, grate & squeeze the potatoes. Fry four small pancakes from it in a dry pan.
  • Sprinkle chopped parsley on each potato pancake.
  • Salt and pepper the lamb fillet and toss in breadcrumbs. Wrap the lamb fillets in the potato pancake.
  • Cook in the oven at 180 degrees C (convection) for 15 minutes.
  • Heat the blanched beans in a butter / oil mixture, add the tomato pieces. Cut the garlic cloves into thin slices and brown them in butter.
