Lemon Delicious with Semolina Ice Cream

Ingredients
 

Semolina ice cream

  • 3 Pc. Egg yolk
  • 120 g Sugar
  • 1 Pc. Vanilla pod
  • 500 ml Whole milk
  • 200 g Cream
  • 50 g Soft wheat semolina
  • 3 tsp Cinammon

Lemon Delicious

  • 3 Pc. Eggs
  • 160 g Sugar
  • 500 ml Milk
  • 100 g Flour
  • 1 tsp Baking powder
  • 1 tbsp Lemon zest
  • 185 ml Lemon juice
  • 1 tbsp Sugar

Instructions
 

Semolina ice cream

  • Mix the egg yolks with the sugar evenly until the sugar has dissolved. Cut the vanilla pod lengthways with a small knife and scrape out the pulp of the vanilla well with the tip of the knife. Add the vanilla pulp to the egg-sugar mixture and stir well. Heat the milk with the empty vanilla pod in a saucepan.
  • Gradually stir the sugar mixture into the milk. Let the mixture rise (do not boil!) In the saucepan, stirring constantly, until it starts to become thicker. Remove the saucepan from the stove, add the semolina, cinnamon and cream.
  • When everything has cooled down to room temperature, pour the mixture into the ice cream maker or, according to these instructions, let it freeze without an ice cream maker.

Lemon Delicious

  • Preheat the oven to 160 degrees. Separate the eggs, beat the egg yolks with sugar until frothy (approx. 5 minutes). Add milk and stir in. Also add lemon zest and juice and fold in the flour and baking powder. Beat the egg white with 1 tbsp sugar until stiff and fold into the lemon mixture. Fill into greased casserole dishes and bake in a water bath for about 20-30 minutes.
