Basic pasta recipe: How to make your own pasta

When it comes to cooking, a good recipe is usually simple. Pasta consists of only three ingredients.

  • 90 grams of semolina. The Italian durum wheat semolina makes your pasta, particularly al dente.
  • 10 grams of flour. This ensures a better grip on the pasta dough
  • 1 egg
  • 1 pinch of salt and a few drops of olive oil
  • Knead all the ingredients together until you have a smooth pasta dough. If the pasta dough sticks sprinkle the kitchen work surface with flour.
  • If you are using a pasta maker, start with the highest setting and gradually tighten the pasta maker. Don’t work too fast or the dough will tear.
  • Alternatively, you can also roll out the pasta thinly with a rolling pin.
  • In the end, cut the pasta to the desired thickness.

Variations on the basic recipe

When it comes to cooking, there are no limits to your imagination. As soon as you know the basic recipe, you have a large number of pasta variations at your disposal.

  • Beetroot Pasta: Add 3-5 tablespoons of beetroot juice to the basic recipe. This turns your pasta wonderfully red and adds a delicate earthy note.
  • Saffron pasta: crush about 1 gram of saffron in olive oil at about 40 degrees and add it to the basic recipe.
  • Squid Pasta: Just a few drops of sepia ink will add graceful, jet-black beauty to your pasta recipe. This pasta is perfect if you want to cook a delicious dish with octopus.
