Mediterranean Rice with Rocket and Tomatoes

  • 10 piece Cherry tomatoes
  • 1 bunch Arugula
  • 1 piece Green paprika
  • 2 piece Garlic cloves
  • 60 g Whole peeled almonds
  • 3 tbsp Olive oil
  • Salt and pepper for seasoning
  • 1 pack Uncle Ben's Express Rice Mediterranean


  • Wash the tomatoes, rocket and peppers. Remove the tomatoes from the stalk and cut in half. Quarter the bell pepper, remove the core and cut into strips. Peel and slice the garlic.
  • Roast the almonds in a pan with 1 tablespoon of olive oil and season with salt. Heat the remaining olive oil in another pan and fry the peppers and garlic over medium heat for about 3 minutes. Add tomatoes and almonds and fry for another 2 minutes. Season everything with salt and pepper.
  • In the meantime, heat the rice according to the instructions on the packet and serve. Arrange the Mediterranean vegetables on top and sprinkle with rocket.
  • Tip 4: Pimientos de Padrón can also be used here instead of peppers.
