Wash the tomatoes, rocket and peppers. Remove the tomatoes from the stalk and cut in half. Quarter the bell pepper, remove the core and cut into strips. Peel and slice the garlic.
Roast the almonds in a pan with 1 tablespoon of olive oil and season with salt. Heat the remaining olive oil in another pan and fry the peppers and garlic over medium heat for about 3 minutes. Add tomatoes and almonds and fry for another 2 minutes. Season everything with salt and pepper.
In the meantime, heat the rice according to the instructions on the packet and serve. Arrange the Mediterranean vegetables on top and sprinkle with rocket.
