Ingredients

  • 125 g Flour type 405
  • 1 pinch Baking powder
  • 2 Eggs size M
  • 0,25 L Milk
  • 1 pinch Salt
  • 4 Nectarines
  • 4 tbsp Clarified butter
  • 40 g Raisins
  • 40 g Chopped pistachio nuts
  • 4 tbsp Honey

Instructions

  • Mix the flour and baking powder. Add eggs, milk and salt, stir until smooth. Let the dough rise for about 10 minutes.
  • In the meantime, wash the nectarines, core them and cut into wedges. Preheat the oven to 150 ° C, switch off.
  • Heat 1 tablespoons of lard in a pan. Spread 1/4 of the nectarine wedges in it. Pour 1/4 of the batter over it and fry for about 4-6 minutes over medium heat. Spread 1/4 of each of the raisins and pistachio nuts on top and carefully place the pancakes on a plate.
  • Let the pancakes simmer for about 5-7 minutes in the switched-off oven and drizzle 1 tablespoon of honey over them. Serve the pancakes warm.
  • Tip 5: Canned peaches or apricots can also be used instead of nectarines.
