Take a mixing bowl / food processor and add the fresh yeast there. Add lukewarm water and stir once. Now weigh in the wheat flour, add the beet syrup, as well as the oat flakes, salt and the homemade yogurt. Knead everything together, about 14 minutes.
Then lightly flour the work surface and place the bread dough on top. Knead once with clean hands and work round. Transfer back to a bowl, then cover and place in a warm place for about one (1) hour and twenty (20) minutes to GO.
In the meantime, preheat the oven to 230 degrees top / bottom heat. After GOING, flour the work surface again and shape the bread dough into the desired shape. Grease a baking pan with a lid, add the bread dough. Then flour, cut as you like and put the lid on it.
Now put in the preheated oven and bake on the lowest rack for about 55 minutes. Remove the lid 10 minutes before the end of the baking time so that the bread has a nice crust. Then take it out and let it cool slightly in the baking pan. Take out later and let cool down completely.
