Oven Aubergines with Feta and Dill

  • 2 Large eggplant
  • 5 tbsp Olive oil
  • 2 Toes Garlic
  • Salt
  • 1 Feta
  • 1 Dill
  • 1 tbsp Honey (liquid)
  • 8 Pickled pepperoni (green)
  • Pepper


  • Wash the aubergines and cut lengthways into thick slices (see picture). Finely dice or press the garlic and mix with the olive oil. Brush the aubergine slices on top with the garlic and olive oil, season with salt and place in the oven at 180 degrees for 15 minutes.
  • Meanwhile, finely crumble the feta and place in a small bowl. Chop the dill and pepperoni and add to the feta along with the honey and pepper and mix well.
  • After 15 minutes, take the tray out of the oven. Cover the aubergines with the feta-dill-pepperoni mixture and place the aubergines in the oven again for 10 minutes at 180 degrees. Then enjoy warm. Good Appetite!
