Pancakes Filled with Tomatoes

Ingredients
 

  • 3 Eggs
  • 0,25 L Milk
  • 0,25 L Natural carbonated mineral water
  • Salt
  • 250 g Flour
  • Butter for frying
  • 2 medium Onions
  • 4 medium Tomatoes
  • Salt
  • Pepper
  • Paprika
  • 100 g Grated cheese

Instructions
 

  • Whisk eggs, milk, mineral water and salt, sift the flour over it and stir until smooth with a whisk, leave to rest for 30 - 60 minutes.
  • In the meantime, peel and slice or grate the onions, cut tomatoes into slices.
  • Heat the butter in a saucepan and fry the onions until golden. Sauté the tomatoes for 3 - 5 minutes.
  • Heat the fat in a pan and bake 2-3 pancakes on both sides.
  • Spread the pancakes on plates, spread the tomato and onion mixture on top and sprinkle with cheese.
