Ingredients

  • 1 bunch Arugula
  • 4 Kumato tomatoes
  • 2 Spring onions
  • 1 Buffalo mozzarella
  • 1 handful Fresh strawberries
  • 100 g Herb olives
  • 1 Simit from the day before
  • Butter
  • Salt
  • Pepper

dressing

  • 1 handful Fresh strawberries
  • 1 tbsp Powdered sugar
  • 1 Clove of garlic
  • 6 tbsp Olive oil
  • 1 tsp Dijon mustard
  • 0,5 Lime, the juice
  • Salt
  • Pepper

  • Wash, spin and sort the rocket, making sure that you remove the stems well, they don't really taste good. Then cut the lettuce into bite-sized pieces and place in a salad bowl
  • Cut the spring onions into fine rings and add to the rocket. Cut the herb olives into rings and add them as well. First quarter the tomatoes, remove the stalk and then cut into bite-sized pieces and place in the bowl. Tear up the buffalo mozzarella with your fingers and add to the bowl.
  • Add a little salt and pepper and stir once. Cut the simit into slices and toast in a little butter in the pan until crispy and then degrease on kitchen paper. Now quickly prepare the dressing: ...

  • Cut the strawberries into small pieces and place in a tall container, roughly cut the clove of garlic and add the mustard, olive oil, lime juice and a little salt and pepper and then puree well with the magic wand. Season again with salt and pepper.

  • Now place the still warm Simit slices over the salad, pour the dressing over it, mix well and let it steep for 5 minutes. In the meantime, quarter the washed strawberries and then pour them over the salad just before serving and mix again.
