Pasta with Carrot Sauce and Garlic Prawns

Ingredients
 

For the prawns

  • 250 g Shrimp tails
  • 3 Garlic cloves
  • Salt coarsely ground to taste
  • Lemon pepper to taste

For the carrot sauce

  • 300 g Diced carrots
  • 1 Diced onion
  • 1 tbsp Butter
  • 1 tsp Brown sugar
  • 300 ml Vegetable broth
  • 1 tbsp Tomato paste concentrated three times
  • 2 tbsp Sour cream

Furthermore

  • 150 g Hörnli noodles

Instructions
 

  • First cook the croissants according to the instructions on the packet until they are soft.
  • During this time, melt the butter and stir in the sugar, add the diced carrots and onions and let them caramelize, then pour the vegetable broth over the sprig of maggi and let everything cook until soft.
  • During this time, peel the garis and cut them into slices, roast the prawn tails lightly in a little olive oil, add the garlic slices and season with salt and lemon pepper. Now turn the whole thing every now and then.
  • Now coarsely mash the soft carrots with the potato masher and then chop them thoroughly with the hand blender.
  • If the mixture is too thick, add some hot liquid vegetable stock, stir in the tomato paste, bring it to the boil and stir in the sour cream.
  • Now drain the pasta and serve with the carrot sauce and prawns.
