Ingredients
 

  • 1000 g Plums
  • 4 piece Eggs
  • 250 g Spelt flour 603
  • 250 ml Milk
  • 1 pinch Salt
  • 4 tablespoon Sugar
  • 1,5 teaspoon Cinnamon
  • 8 teaspoon Butter

  • This type of preparation of the plum pancake is also suitable for beginners, as the plums come into the batter and are not placed on top. This makes turning the pancake much easier 🙂 ATTENTION: my time is given for 2 plum pancakes. The time is of course longer. Have the ingredients ready.
  • First wash the plums, remove the stems, core them and then cut them into small pieces.
  • Separate the eggs and beat the egg whites with a pinch of salt until stiff.
  • Put the egg yolks, flour and milk in a mixing bowl. Mix thoroughly with a whisk.
  • Add the plum pieces and stir.
  • Now add the egg whites and stir in.
  • Pour 1 teaspoon of butter into a pan and add 1 ladle of pancake batter. As soon as the bottom of the pancake is golden brown, turn the pancake with the help of a spatula. Fry for another 2 minutes. Do this until the dough is used up. There will be 8 pancakes.
  • Put the sugar in a small bowl and mix with the cinnamon. Place a plum pancake on a plate and sprinkle with cinnamon sugar. If you don't like cinnamon you can of course only use sugar. Have fun baking and bon appetite
