Ingredients
 

Potato and carrot soup:

  • 500 g Potatoes
  • 400 g Carrots
  • 100 g Snow peas
  • 200 g Cherry tomatoes panicles
  • 30 g Fresh ginger
  • 1 Red Chilli pepper
  • 1 tbsp Butter
  • 400 ml Vegetable broth
  • Salt and pepper

Ham topping:

  • 70 g Cooked ham
  • 1 tbsp Butter

Instructions
 

Preparation of the soup:

  • Peel the potatoes, wash them and cut them into small cubes .... Peel the carrots and cut them into small cubes as well .... Wash the sugar snap peas and cut into thicker strips ... Wash and quarter the cherry tomatoes .... Peel the ginger and cut into small ones Cut into cubes ... Cut the chilli pepper lengthways ... Scrape out the seeds and white skins, wash and also cut into small cubes ...

Potato and carrot soup:

  • Melt the butter in a saucepan ... fry the ginger and chilli in it until soft .... add the potatoes and fry them briefly .... mix in the carrots and sugar snap peas ... deglaze with the vegetable stock .... season with salt and pepper. ... Cover and simmer for approx. 15 minutes .... Fold in tomatoes and bring to the boil once, then cover and let stand for 5 minutes .... done!

Ham topping

  • Cut the ham into strips ... melt the butter in a pan and fry the ham strips crosswise ...

Serving:

  • Put the potato and carrot soup in a deep plate and garnish with the ham ... Bon appetit!
