Ingredients
 

  • 250 g Potatoes
  • 3 piece Eggs
  • 100 g Wheat flour
  • 100 ml Cream 30% fat
  • 1 tsp Butter
  • 200 g Salmon gravlax (dill honey sauce)
  • Salt
  • 1 Pinches Freshly grated nutmeg

Instructions
 

  • Boil the potatoes in salted water for about 30 minutes until they are completely soft. Drain the potatoes and let them evaporate a little. Finely mash with a potato masher (or press through a potato press).
  • Separate the flour, eggs, put the egg yolks and cream in a bowl and mix with a hand mixer. Season with salt and nutmeg. Beat the egg whites until stiff and fold in.
  • Brush the waffle iron with a little butter and bake the potato waffles in portions. Arrange 2 potato waffles on plates with salmon and the dill-honey sauce and serve.
