Ingredients
 

  • 800 g Quince fresh
  • Prepared
  • 250 ml Freshly squeezed orange juice
  • 0,5 tsp Vanilla powder
  • 1 packet Preserving sugar 2: 1

  • I had 2 large quinces with a total weight of 990g. These are rubbed with a kitchen towel, then peeled and cut into small pieces. Weigh out 800g. (I found it exactly.)
  • Also squeeze 3 oranges (possibly more or less) and measure out 250ml of juice.
  • Now put both together (including the orange pieces that get stuck when squeezing) in a saucepan, bring to the boil with the lid on over medium heat and cook for about 15 minutes. You can check with a wooden stick whether the quinces are soft.
  • Then take it off the stove and let it cool down a bit. Then puree coarsely or finely as desired.
  • Now stir in the vanilla and preserving sugar.
  • Bring to the boil, stirring constantly, and let simmer for 4-5 minutes. Caution splashes!
  • Then fill into twist-off glasses. Close it tightly and turn it upside down for a few minutes.
