Putting Eggs – You Have to Pay Attention to That

Putting eggs: This is how brine eggs work

As a rule, peeled eggs are inserted. However, you can also pickle eggs with their shells. But then you have to use more salt.

  • If possible, use fresh eggs for pickling. It is best to do the egg test in the water beforehand to determine whether the eggs are still good.
  • While you are hard-boiling the eggs for ten minutes, you can prepare the broth.
  • If you want to put ten eggs, you need 600 ml of water, 20 g of salt, 6 bay leaves, 2 onions, and 2 teaspoons of cumin.
  • Finely dice the onion and cook with the remaining ingredients.
  • If the eggs are hard-boiled, give them a quick shock. If you want to insert the sole eggs with the shell, the shell will cave in some places. Then you need about 40 grams of salt instead of 20 grams.
  • Otherwise, peel the eggs and layer them in the mason jar. Finally, add the hot liquid. It is important that the eggs are completely covered with broth.
  • Close the jar tightly and let the eggs stand for at least a day and you will have delicious brine eggs. The pickled eggs taste delicious with some bread, butter, and mustard. But a little pepper, vinegar, and oil also go well with it.
  • You no longer have to salt the brine eggs. The eggs have already absorbed enough salt from the broth. The salt will keep the eggs unopened for about two weeks.
