Ingredients
- 300 g Quail beans
- 0,5 bunch Soup greens
- 4 Potatoes
- 1 Can Chunky tomatoes
- 30 g Clarified butter
- 2 tbsp Flour
- 250 g Kassler
- Salt and pepper
Instructions
- Soak the beans in the evening.
- Prepare dark roux.
- The next day, place the beans with the soaking water and water on them about 5 cm above the beans.
- Peel and dice the potatoes and cut the soup greens into small pieces.
- After about 20 minutes add the soup greens and the potatoes as well as the chunky tomatoes and cook everything until soft.
- Thicken the soup with the roux and season.
- Add Kassler and simmer for a few minutes and season again
