Quail Bean Soup with Smoked Pork

Ingredients
 

  • 300 g Quail beans
  • 0,5 bunch Soup greens
  • 4 Potatoes
  • 1 Can Chunky tomatoes
  • 30 g Clarified butter
  • 2 tbsp Flour
  • 250 g Kassler
  • Salt and pepper

Instructions
 

  • Soak the beans in the evening.
  • Prepare dark roux.
  • The next day, place the beans with the soaking water and water on them about 5 cm above the beans.
  • Peel and dice the potatoes and cut the soup greens into small pieces.
  • After about 20 minutes add the soup greens and the potatoes as well as the chunky tomatoes and cook everything until soft.
  • Thicken the soup with the roux and season.
  • Add Kassler and simmer for a few minutes and season again
