Chicken Soup: A quick recipe

For a quick but delicious chicken soup, you need the following ingredients: 500 grams of chicken breast fillet, 2.7 liters of chicken broth, 500 grams of soup vegetables with carrots, celeriac, leeks, and parsley, 250 grams of noodles, and salt and pepper.

  • Wash and dry the chicken breast fillet. Season well with salt and pepper before simmering in 1 quart of chicken broth over low heat for about 12 minutes. Make sure that the broth does not boil – otherwise, the meat will be very tough.
  • Now clean the soup vegetables and then dice the carrots and celeriac. Cut the leek into rings and chop the parsley.
  • When the meat is done, take it out of the pot and cut it into small cubes. Meanwhile, the entire 2.7-liter broth should boil with the vegetables and pasta.
  • Two to three minutes before the noodles are cooked, add the chicken pieces and leeks to the soup. The soup is ready when the noodles are done. Season the broth with salt and pepper and serve with fresh parsley.
