Radish salad

Ingredients for 4 servings:

  • 1 bunch of radishes
  • 6 m.-sized gherkins or large
  • 1 bunch of spring onions
  • 150 g natural yogurt
  • 2 tsp, leveled mustard, medium hot,
  • ½ bunch chives
  • Honey
  • Vinegar
  • oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

light, with pickles

Finely dice the radishes, pickled cucumbers, and spring onions (approx. 1/2 cm to 1 cm cubes) and place them in a bowl. Mix a salad dressing from yogurt, mustard, honey, vinegar, salt, oil, and pepper. Pour over the salad ingredients, season to taste, and let the salad marinate briefly. It looks great garnished with chives just before serving. The salad tastes great with buttered bread, perhaps with chives, or simply as a side dish to a main course.
