For the roast beef

  • 1,2 kg Roast beef
  • 1 Pr Salt
  • 1 Pr Pepper

For the green sauce

  • 250 ml Coconut milk
  • 200 ml Cream
  • 2 tbsp Coconut cream
  • 3 tsp Green curry
  • 1 Pr Salt
  • 1 Pr Pepper
  • 1 Pr Lime zest

For the pea and mint duo

  • 400 g Peas
  • 100 g Peas green fresh
  • 1 bunch Mint
  • 1 Pr Lime zest
  • 1 Pr Salt
  • 1 Pr Pepper
  • 1 tsp Wasabi


Roast beef:

  • Cook the roast beef for 4.5 hours at 55 degrees "Sous Vide". Then take it out of the water bath and parry. Then fry the meat very hot in the pan and let it become crispy on all sides.
  • Remove the layer of fat and leave to rest in aluminum foil for 2 minutes. Then cut against the grain and serve.

green sauce

  • Sweat the green curry in a pan and deglaze with coconut milk and cream. Season to taste with salt and pepper and bring to the boil briefly.
  • Then add the lime zest and coconut cream and serve the sauce hot.

Pea and mint duo:

  • Wash and blanch the peas, add the mint and puree everything. Then season with a pinch of salt and pepper.
  • Then add the lime zest and a teaspoon of wasabi. Then bring the puree to the boil briefly and serve hot.
