Saddle of Pork Roast

Ingredients
 

  • 750 g Pork loin
  • 5 tbsp Olive oil
  • Pepper from the grinder
  • Hot paprika powder
  • Soy sauce dark
  • 2 Onion
  • 2 Garlic cloves pressed
  • 1 tbsp Gravy (dry powder)
  • Sauce thickener dark
  • 400 ml Meatsoup

Instructions
 

  • Wash the meat under cold water and pat dry. Preheat the oven to 80 degrees. Rub the saddle of pork with pepper, paprika powder and soy sauce, pour 2 tablespoons of olive oil over it and let it rest for about 20 minutes.
  • Heat the remaining oil in a pan and fry the meat all over for about 10 minutes. Put the meat in a preheated dish and place the meat thermometer at the thickest part of the roast. Place on the lowest rack of the oven and cook for approx. 4 1/2 hours.

For the sauce

  • Peel and quarter the onion and roast it together with the garlic in the pan with the roasting set, deglaze with the stock and bring to a boil. Stir in the gravy, thicken a little with the sauce thickener and season with salt and pepper. Then puree the sauce.
  • At the end of the cooking time, let the roast rest for a while in the switched off oven. Then cut the roast into slices and arrange on preheated plates with side dishes of your choice, cover with the sauce and serve immediately.
