Ingredients
 

  • 6 small Randen = beetroot
  • 1 Onion
  • 200 g Cottage cheese
  • 2 tsp Horseradish
  • 0,75 tsp Caraway seeds
  • 0,75 tsp Lemon juice
  • 0,75 tsp Salt

Instructions
 

  • Boil the beetroot until firm (approx. 30 min.), Let it cool down and cut into 1 cm cubes
  • Chop the onions and mix well with the beetroot, the horseradish, the caraway + the pinch of salt.
  • fold in the cottage and season with a little lemon juice.
  • Let it steep in the fridge for 1 hours then serve. if you want to keep something for the next day, you should replace the lemon juice with vinegar, it will last longer.
  • I like to serve it with green kernel pancakes or latkes. - bteavon, enjoy your meal
