Salmon on Bed of Cucumbers on Salad with Mango, Carrot and Avocado

- 2 Pc. Salmon fillet
- 1 Pc Cucumber fresh
- 1 Pc. Lettuce head
- 1 Pc. Carrot
- 1 Pc. Lemon fresh
- 1 Pc. Mango
- 1 Pc. Onion
- 1 Pc. Fresh avocado
- 1 bunch Fresh dill
- 10 Pc. Cocktail tomatoes
- 2 Pc. Spring onion rod
- Salt and pepper
- Vinegar
- Olive oil
- First quarter the cucumber and then cut these quarters with the skin into thin slices. Then dress the cucumbers with salt, pepper, vinegar and the juice of half a lemon. Chop the dill and mix in. Then the cucumber salad has to pull through for about 10-15 minutes.
- While doing this, peel the carrot and then pull down wafer-thin slices lengthways with a peeler. This allows the vinegar to soak in better and makes the carrots nice and soft.
- After removing the skin, cut the mango into slices, dice them and set them aside.
- Immediately afterwards, halve the avocado, remove from the skin and then cut the halves lengthways into strips. Then put this aside.
- Also peel the onion and cut into strips. Finally halve the spring onions in the tomatoes and put both aside until serving.
- Then the salmon is fried. Just salt the salmon fillet pieces and slowly fry them on both sides in olive oil.
- While the fish is in the pan, the plates can be prepared. To do this, place washed lettuce leaves in the upper half. Then come the carrot slices, the onion strips, the mango cubes and the cut avocado halves. Drizzle a little vinegar over the carrots so that it can be absorbed well. Arrange the cucumber salad in the lower half of the plate as a bed for the fish. Finally, the fish is put on its bed and the strips of spring onions are spread over the dish.
