Ingredients
 

  • 100 g Smoked salmon
  • 1 Lemon untreated
  • 3 tbsp Creme fraiche Cheese
  • 1 bunch Spring onions
  • Pepper

Instructions
 

  • Remove the smoked salmon skin and the middle piece. Cut the salmon into small, fine cubes.
  • Wash two spring onions, chop them finely and add to the salmon. Squeeze half a lemon and add the juice to the other ingredients. Add three large tablespoons of crème fraîche to the salmon, stir and season with freshly ground pepper. Add some lemon zest to the salmon mixture to refine.
  • Put the salmon tartar on a plate in a cookie cutter and press it down lightly with a spoon so that the tartare remains when you remove the form from the salmon.
