Waxyaabaha ay ka kooban
Maraq khudaar baradho:
- 800 g Baradho waaweyn, oo dhumuc leh
- 400 g Karootada (halkan: xaleef karooto / wax soo saar u gaar ah TK)
- 200 g Leeks (halkan: leek rings / wax soo saar u gaar ah TK)
- 200 g Baastada 2
- 2 piece Toonta toonta
- 2 tbsp subag
- 2 litir Maraq khudradeed (8 qaado oo maraq degdeg ah)
- 1 tsp Salt
- 1 tsp Basbaaska midabada leh ee ka soo shiidda
- 1 tsp Marjoram la xoqay
- 1 tbsp Maggi wort
Boqoshaada Porcini:
- 400 g Boqoshaada doofaarka cusub
- 2 tbsp subag
- 125 g xabadaha xamaamka
- 75 g 1 Basasha
- 100 ml Biyaha
- 75 g Kariim Darwiish

Tilmaamaha
Maraq khudaar baradho:
- Peel oo dhaq baradhada oo jarjar xabadaha yaryar. Peel oo jarjar basasha. Diir oo si yaryar u jarjar xabo oo toon ah. Kuleyli subagga (2 tbsp) digsi weyn oo shiil khudaarta ( xabadaha basasha + xabadaha toon, xaleef karootada iyo siddooyin caleen ah) si xooggan. Deglaze / ku shub kaydka khudradda (2 litir / 8 qaado oo ah kayd degdeg ah). Ku dar milix (1 qaado shaah), basbaaska midabka leh ee shiidka (1 qaado shaah) iyo marjoram daadi (1 qaado shaah) wax walbana ha karkari/karrin qiyaas ahaan. 30 daqiiqo oo daboolka xiran yahay. Ugu dambeyntii, xilli / xilli leh xawaash Maggi (1 tbsp).
Boqoshaada Porcini:
- Nadiifi / caday boqoshaada dhagaxa oo goo googooyo / qaybo yaryar. Peel basasha oo si fiican u jarjar. Kuleyli subagga (2 tbsp) digsiga ku dhex shiil xabadaha hamka leh xabadaha basasha ee ku jira. Ku dar boqoshaada doofaarka ee la jarjaray oo walaaq-shiil / walaaq. Dami / ku shub biyaha (100 ml) oo sii wad shiil / isku kari ilaa inta biyuhu si buuxda u karkarin / ay uumi baxayaan. Isku laab kareemka Darwishka (75 g) oo yaree / isku kari. Ugu dambeyntii, ku dar / laalaa boqoshaada porcini galay maraq baradho iyo khudradda.
