Soy Medallions with Rice and Peppers

- 400 ml Vegetable broth
- 100 g Long grain top rice
- 5 small Soy medallions
- 1 size Red pepper
- 1 tbsp Olive oil
- 1 tbsp Coriander
- 1 tbsp Thyme freeze dried
- 1 tbsp Ground cumin
- 1 tbsp Paprika powder
- 1 tbsp Ground cinnamon
- 1 tbsp Salt and pepper
- Wash, core and cut the peppers into small pieces. Heat the oil in a large pan and briefly fry the pepper pieces in it. Add the rice and deglaze with the vegetable stock. Soak the medallions in it and simmer everything together for about 10 minutes. Season to taste with the spices and serve.
