Spaghetti with Garlic Sauce and Hot Prawns

Ingredients
 

spaghetti

  • 200 g Pasta flour 00
  • 2 Eggs
  • 1 pinch Salt
  • Water

hot prawns

  • 200 g Shrimp
  • 2 tsp Sambal Oelek
  • 2 tbsp Olive oil

garlic sauce

  • 1 Shallot, finely diced
  • 5 Garlic cloves, finely chopped
  • 200 ml Brut cider
  • 200 ml Vegetable broth
  • 100 ml Cream
  • 30 g Parmesan, freshly grated
  • 2 tbsp Parsley, finely chopped
  • Espelette pepper
  • Salt
  • Pepper
  • Olive oil

Instructions

  • Put the flour together with the salt in a bowl, make a hollow in the middle and beat the eggs into it. Now add a tiny sip of water and mix in a circular motion with a fork.
  • I really add the water here in sips, how much depends on the size of the egg, so I don't give any details about the amount here. Now start kneading with your hands, possibly still adding a sip of water. Knead the dough vigorously.
  • When the dough no longer sticks to your fingers and the bowl, remove it from the bowl and continue to knead vigorously with both hands on the worktop. The dough should be nice and smooth and silky and if you make a dent in it with your finger, it should come back very slowly. Let the dough rest at room temperature for at least 30 minutes.
  • Now roll out the dough thinly with the pasta machine and cut the spaghetti with the spaghetti attachment. Now cook the spaghetti in sufficiently salted water until al dente.

hot prawns

  • Thoroughly devein the prawns, then wash and dab. Mix the Samal Oelek with the olive oil and marinate the prawns in it for about 2 hours. Just before eating, fry in a hot pan for about 1.5 minutes on both sides. It is not necessary to add oil.

garlic sauce

  • Heat the oil in a saucepan and fry the shallot and garlic until translucent. Then deglaze with cider and reduce to about 1/3, then add the vegetable stock and everything is again reduced to about half. Then puree everything with the magic wand and put it back on the stove.
  • Now add the cream and let it simmer gently. Season with salt and pepper. Then add the Parmesan and let it dissolve, do not let the sauce boil anymore. Season again to taste and season with Espelette pepper and fold in the parsley.

finish

  • Strain the pasta, catching about 1 ladle of the pasta water and then add this to the garlic sauce. Put the noodles back in the empty saucepan, pour the sauce over the noodles and toss everything thoroughly.
  • Now arrange the spaghetti on a pasta plate and add the fried hot prawns.
