Spelled Bread with Hemp Seeds and Chia

  • 250 g Spelt flour type 630
  • 150 g Wholemeal spelt flour
  • 50 g Hemp flour
  • 50 g Rye flour
  • 60 g Peeled hemp seeds
  • 60 g Chia
  • 12 g Salt
  • 1 tsp Sugar
  • 1 packet Dry yeast
  • 450 ml Lukewarm water
  • 2 tbsp Apple Cider Vinegar
  • 2 tbsp Hemp oil


  • Mix all dry ingredients together well, pour lukewarm water, oil and apple cider vinegar into the middle of the dry mixture and mix vigorously with the food processor. The dough becomes very viscous. Line a baking pan with baking paper, if you want you can sprinkle spelled flakes or grains on the base. Let the viscous dough flow into the baking pan, spray with warm water and spread with a spatula, cover and let rise for about 20 minutes.
  • Then remove the cover and place in the cold oven for 60 minutes. Baking temperature 180 ° C top / bottom heat. After about 25 minutes, briefly open the oven door and pour a quarter cup of cold water on the floor of the oven, close the door quickly (burst of steam).
  • The bread is aromatic, moist and stays fresh until the end!
