Spelled Rice Pudding with Raspberries

Ingredients
 

  • 100 g Spelled like rice
  • 300 ml Coconut milk
  • 2 tbsp Agave syrup
  • 100 g Raspberries (frozen)
  • 1 tsp Ground cinnamon
  • 1 Knife point Vanilla extract

Instructions
 

  • Put the spelled grains in a saucepan with coconut milk. Add cinnamon and vanilla. Bring the whole thing to a boil and simmer for about 25 minutes. If you like the spelled grains with a bit more bite, you can take the pot off the stove after just 20 minutes.
  • Meanwhile, defrost the raspberries. I do this in the oven with very little heat.
  • As soon as the spelled rice is done, add the agave syrup to sweeten the rice. Alternatively, honey or another sweetener can be used.
  • Finally, arrange the spelled rice on a deep plate and garnish with the raspberries. If you like, you can also use other fruits or sprinkle the whole thing with chopped nuts or desiccated coconut.
