Ingredients
 

  • Pre-Dough:
  • 100 g Wholemeal spelt flour
  • 200 ml Water
  • 1 tsp Honey
  • 20 g Yeast
  • Main dough:
  • 400 g Wholemeal spelt flour
  • 5 grated Potatoes cooked the day before
  • 1 tsp Malt coffee dry
  • 15 g Salt
  • 35 ml Olive oil
  • 100 ml Water

Instructions
 

  • Make the pre-dough the evening before and let it start, then put it in the refrigerator for about 12 hours.
  • For the main dough, put all the ingredients in a bowl with the pre-dough and knead everything into a smooth dough. Let the dough rest for about 1.5 hours and knead again. Shape into a loaf of bread and let rise in a proofing basket for 30-45 minutes.
  • Preheat the oven to 200 °, when it is hot turn the bread carefully onto a baking sheet and cut into it. Put them in the oven and steam them neatly. Bake at 200 ° for 10 minutes, then steam again and set down to 170 °. Bake ready for another 35 minutes
