Spinach Pasta with Fried Egg

Ingredients
 

  • 300 g Tagliatelle
  • 300 g Frozen spinach leaves
  • 2 piece Diced onion
  • 2 small Green chilli peppers finely chopped
  • Salt to taste
  • Black pepper from the mill to taste
  • Freshly grated nutmeg to taste
  • 2 small Garlic cloves chopped
  • 2 tablespoon Butter
  • 4 piece Free range eggs

Instructions
 

  • Cook the pasta according to the instructions and strain it. For the spinach, heat the butter in a pan. Sauté the onions, garlic and chilli. Add the spinach and put the lid on the pan. Thaw the spinach in it.
  • Then fry and season with salt, pepper and nutmeg. Add the pasta and fry everything well mixed again briefly.
  • Then make a nest in the middle and fry the eggs in it as a fried egg. Sprinkle with a little salt and pepper. Put the spinach noodles on a plate and the fried eggs on top. Good Appetite.

Addendum

  • I originally cooked this for myself when Göga was still on the long haul. I have now cooked it for the two of us in the appropriate quantities.
