Spinach with Crispy Veal Sausage Slices and Mashed Potatoes

  • 500 g Spinach
  • 1 Onion
  • 2 Garlic cloves
  • 4 Potatoes
  • Roasted onions
  • Butter
  • 5 White sausages
  • 1 Egg
  • Milk
  • Flour, breadcrumbs, Parmesan or Grana Padano
  • Oil, salt, pepper


  • Remove the stalks from the spinach, wash and drain well. Peel the onion and garlic cloves and cut into small cubes. Peel and quarter the potatoes and put them in salted water.
  • Remove the skin from the veal sausages and cut into slices. Grate the Parmesan and mix with the same amount of breadcrumbs. Mix an egg with a little milk. Put the flour in a plate.
  • Heat some oil in a pan and fry the onion and garlic cubes. Add the drained spinach and let it collapse. Season with salt and pepper.
  • Roll the veal sausage slices first in flour, then in egg and then in the Parmesan-breadcrumb mixture. Fry in oil on both sides in a pan until crispy.
  • In the meantime, cook the potatoes, drain them and mash them with a little milk. Add fried onions and butter and season with salt and pepper.
  • Arrange the baked veal sausage slices on top of mashed potatoes and spinach.
