Ingredients
- 2 size Sweet potatoes
- 2 size Lead onions
- 5 Poles Celery
- 200 g Feta
- 150 g Cherry tomatoes
- Peanuts (optional)
- 1 tablespoon Mustard
- 2 tablespoon Vinegar
- 2 tablespoon Honey
- 5 tablespoon Oil
- Salt and pepper
Instructions
- Peel the sweet potatoes and cut them into medium-sized cubes. Sprinkle with 3 tablespoons of oil and 2 teaspoons of salt and mix well. Then place on a baking sheet lined with baking paper and place in the oven at 180 degrees for 20-25 minutes. Then let cool down a bit.
- Meanwhile, cut the feta into cubes, cut the spring onions and celery into rings, wash and quarter the tomatoes and put everything in a large salad bowl.
- For the dressing, mix 2 tablespoons of oil with the vinegar, honey, mustard and a little salt and pepper and stir well.
- Then add the slightly cooled sweet potatoes to the vegetables and cheese in the salad bowl and add the dressing. Mix everything well and sprinkle with a few peanuts. Good Appetite!
