Sweet Potato Salad with Feta Cheese and Cherry Tomatoes

  • 2 size Sweet potatoes
  • 2 size Lead onions
  • 5 Poles Celery
  • 200 g Feta
  • 150 g Cherry tomatoes
  • Peanuts (optional)
  • 1 tablespoon Mustard
  • 2 tablespoon Vinegar
  • 2 tablespoon Honey
  • 5 tablespoon Oil
  • Salt and pepper


  • Peel the sweet potatoes and cut them into medium-sized cubes. Sprinkle with 3 tablespoons of oil and 2 teaspoons of salt and mix well. Then place on a baking sheet lined with baking paper and place in the oven at 180 degrees for 20-25 minutes. Then let cool down a bit.
  • Meanwhile, cut the feta into cubes, cut the spring onions and celery into rings, wash and quarter the tomatoes and put everything in a large salad bowl.
  • For the dressing, mix 2 tablespoons of oil with the vinegar, honey, mustard and a little salt and pepper and stir well.
  • Then add the slightly cooled sweet potatoes to the vegetables and cheese in the salad bowl and add the dressing. Mix everything well and sprinkle with a few peanuts. Good Appetite!
