Ingredients
- 2 Eggs
- 100 g Cooked ham
- 150 g Frozen spinach leaves
- Salt
- 0,5 Fresh onion
- 1 tbsp Olive oil
- Salt, pepper and nutmeg
- 1 pack Puff pastry from the refrigerated shelf
- 1 Egg yolk
Instructions
- Boil eggs for 10 minutes. Quench and let cool. Cut the ham into fine strips.
- Bring the spinach to the boil in a little salted water. Cover and simmer gently for about 7 minutes. Then drain, drain and squeeze out well.
- Peel and finely chop the onion. Sauté briefly in olive oil. Add the spinach and cook for 3 minutes. Let cool down.
- Roll out the puff pastry on a baking sheet. Cover the middle with the ham strips. Spread the spinach on top. Peel and slice the eggs and place on top of the spinach. Season with salt, pepper and nutmeg.
- Fold the puff pastry on both sides. Press firmly. (I had previously cut out a few flowers and "glued" them to them). Seal the edges well. Whisk the egg yolks and brush the puff pastry with them.
- Bake the puff pastry in the oven at 200 degrees for about 30 minutes. Take out of the oven. Let cool down a little and cut into slices.
