Put the tuna on a sieve and drain well. Peel and finely chop the garlic, wash the lime and use the zest puller to pull about 1 teaspoon of lime zest from the skin and squeeze halfway.
Put the tuna with garlic, lime zest and juice, cream cheese and crème fraîche in a tall container and puree using a hand blender. Put the mixture in a bowl and chill for 1 hour. Fold in the parsley and season with salt and pepper.
