Turmeric Chicken Drumsticks with Avocado Salsa and Hearty Mashed Potatoes

Ingredients
 

Turmeric Chicken Drumsticks:

  • 600 g 6 chicken drumsticks
  • 2 tbsp Olive oil
  • 1 tsp Ground turmeric
  • 1 tsp Sweet paprika
  • 1 tsp Ground cumin
  • 1 tsp Brown sugar
  • 6 big pinches Coarse sea salt from the mill

Avocado Salsa:

  • 100 g ½ Avocado ausgelöst
  • 150 g 1 large tomato
  • 50 g 1 red onion
  • 1 clove of garlic
  • 4 big pinches Coarse sea salt from the mill
  • 4 big pinches Colorful pepper from the mill
  • 2 powerful splashes Lemon juice

Hearty mashed potatoes:

  • 280 g 360 g potatoes / peeled
  • 1 tsp Salt
  • 1 tsp Ground turmeric
  • 1 tbsp Butter
  • 1 tbsp Cooking cream
  • 2 big pinches Coarse sea salt from the mill
  • 2 big pinches Colorful pepper from the mill
  • 1 big pinch Freshly grated nutmeg
  • 10 g Freshly grated Parmesan

Serve:

  • 2 Stalk Parsley
  • 2 piece Radish

Instructions
 

Turmeric Chicken Drumsticks:

  • Wash the chicken drumsticks and pat dry with kitchen paper. Mix a marinade from olive oil (2 tbsp), ground turmeric (1 teaspoon), sweet paprika (1 teaspoon), ground cumin (1 teaspoon), brown sugar (1 teaspoon) and coarse sea salt from the mill (6 big pinches) and marinate / brush the chicken drumsticks with it. Preheat the oven to 200 ° C. Place the marinated chicken drumsticks on a baking tray lined with baking paper and cook / bake in the oven at 200 ° C for about 45 minutes until golden-brown. The last 5 minutes possibly with grill function! Brush the turmeric and chicken drumsticks repeatedly with the marinade while frying.

Avocado Salsa:

  • Halve the avocado, remove the stone, remove the pulp with a small spoon and dice. Remove the tomato stalk, cut the tomato crosswise from above, scald with boiling water, leave to stand for a while, remove, peel and dice. Peel onion and chop finely. Peel the garlic clove and dice it very finely. Put all ingredients (avocado cubes, tomato cubes, onion cubes, garlic clove cubes, 4 big pinches of coarse sea salt from the mill, 4 big pinches of colored pepper from the mill and 2 strong dashes of lemon juice) in a bowl and mix carefully.

Hearty mashed potatoes:

  • Peel and wash the potatoes, cook in salted water (1 teaspoon salt) ground with turmeric (1 teaspoon) for about 20 minutes, drain and return to the hot saucepan. Add butter (1 tbsp), cooking cream (1 tbsp), coarse sea salt from the mill (2 big pinches), colored pepper from the mill (2 big pinches) and freshly grated nutmeg (1 big pinch) and work through well with the potato masher / stamp through. Grate fresh Parmesan cheese (approx. 10 g) and fold / mix into the mashed potatoes.

Serve:

  • Serve turmeric and chicken drumsticks drizzled with gravy, avocado salsa and hearty mashed potatoes, each garnished with a radish and a stick of parsley.

Tip: grow avocado trees yourself!

  • The avocado core is actually too good to throw away. Wash the avocado core thoroughly, insert 3 toothpicks in the upper third and hang in a glass with water. The avocado core should be about 1/3 immersed. Repeatedly refill water, now wait until the core has formed enough roots and then plant in a pot with potting soil.
