Udo’s Fine Nut Cake

The perfect udo’s fine nut cake recipe with a picture and simple step-by-step instructions.

  • 200 g Ground hazelnuts
  • 250 gr Soft butter
  • 180 g Sugar
  • 4 Pc. Eggs
  • 200 gr Flour
  • 200 gr Baking powder
  • 40 g Rum
  • 40 g Vanilla sugar
  • 200 gr Raisins
  • 100 g Marzipan
  • 100 g Chocolate chips
  • 3 tbsp Semolina
  • 3 tbsp Chocolate icing whole milk
  • 50 g Brittle
  1. Stir the butter, sugar, eggs and rum until foamy. Then add the sifted flour, vanilla sugar and hazelnuts and baking powder. Pour the dough in layers, toss in the previously greased loaf pan with semolina, add a few raisins to each layer, Add chocolate chips and small pieces of marzipan, then put the loaf pan in the oven and bake at 175 degrees for about 75 minutes
  2. After it has cooled down, liquefy the chocolate icing and spread the brittle sprinkles on it
