Vegan Gingerbread

The perfect vegan gingerbread recipe with a picture and simple step-by-step instructions.

  • 200 g Spelled flour
  • 50 g Wholemeal spelled flour
  • 100 g Applesauce
  • 80 g Sugar
  • 50 g Vegan margarine
  • 50 g Ground almonds
  • 3 tsp Ginger bread spice
  • 3 tbsp Cocoa powder
  • 1 tsp Baking soda
  1. Whether gingerbread men or Aachener Printen – the sweet and strongly seasoned pastries come in many shapes and variants. In many cultures, gingerbread is an integral part of Christmas biscuits, but bakers consider gingerbread to be long-life baked goods. The production has a long tradition and is part of the local baking culture in many places.
  2. In addition to traditional production, there is also an increasing number of vegan gingerbread cookies made with applesauce. A delicious plant-based alternative that belongs on every vegan’s Christmas plate!

Vegan gingerbread with applesauce:

  1. Mix the apple puree and sugar until the sugar has dissolved. Add cocoa powder and gingerbread spice.
  2. Knead the spelled flour, wholemeal spelled flour, ground almonds and margarine with the applesauce mixture to form a dough. If the batter is too firm, add a little more applesauce.
  3. Preheat the oven to 180 ° C top / bottom heat.
  4. Roll out the dough about 0.8 cm on a floured surface and cut into gingerbread men or other shapes.
  5. Place the gingerbread cookies on a baking tray with baking paper and bake for about 10 minutes at 180 ° C.
