Vegan Tzatziki
The perfect vegan tzatziki recipe with a picture and simple step-by-step instructions.
- 500 ml Soy yogurt
- 0,5 Cucumber
- 2 Garlic cloves
- 0,5 bunch Fresh smooth parsley
- 1 Splash Freshly squeezed lemon juice
- 1 tbsp Olive oil
- Salt and pepper
- ATTENTION! SOYA YOGURT HAS TO BE DRAINED FOR 12 HOURS! Place the soy yoghurt in a fine sieve lined with cheesecloth over a bowl and allow to drain overnight – at least 12 hours.
- Grate the cucumber – with the skin – into the drained soy yoghurt (which is now firm and “quarky”).
- Press the garlic into the yogurt.
- Stir in lemon juice and olive oil.
- Finely chop the parsley and stir in.
- Season to taste with salt and pepper and let it steep for at least another hour.
