Vegan Tzatziki

The perfect vegan tzatziki recipe with a picture and simple step-by-step instructions.

  • 500 ml Soy yogurt
  • 0,5 Cucumber
  • 2 Garlic cloves
  • 0,5 bunch Fresh smooth parsley
  • 1 Splash Freshly squeezed lemon juice
  • 1 tbsp Olive oil
  • Salt and pepper
  1. ATTENTION! SOYA YOGURT HAS TO BE DRAINED FOR 12 HOURS! Place the soy yoghurt in a fine sieve lined with cheesecloth over a bowl and allow to drain overnight – at least 12 hours.
  1. Grate the cucumber – with the skin – into the drained soy yoghurt (which is now firm and “quarky”).
  1. Press the garlic into the yogurt.
  1. Stir in lemon juice and olive oil.
  1. Finely chop the parsley and stir in.
  1. Season to taste with salt and pepper and let it steep for at least another hour.
