Vegetable Meat Cutlets with Sweet Corn and Mashed Potatoes

The perfect vegetable meat cutlets with sweet corn and mashed potatoes recipe with a picture and simple step-by-step instructions.

Vegetable mince meatballs: (10 pieces)

  • 250 g Pig meat
  • 200 g Potatoes
  • 200 g Zucchini
  • 100 g 1 Möhre
  • 100 g 1 Zwiebel

Sweet Corn:

  • 140 g 1 kleine Dose Mais / Abtropfgewicht

  • 1 tsp Powdered sugar
  • 2 big pinches Coarse sea salt from the mill
  • 2 big pinches Colorful pepper from the mill
  • 2 tbsp Cooking cream

Mashed potatoes:

  • 300 g Potatoes
  • 1 tsp Salt
  • 1 tsp Ground turmeric
  • 1 tbsp Butter
  • 2 tbsp Cooking cream
  • 2 big pinches Coarse sea salt from the mill
  • 2 big pinches Colorful pepper from the mill
  • 1 big pinch Freshly grated nutmeg

Serve:

  • 2 * ½ kleine Tomate zum Garnieren

Vegetable mince meatballs:

  1. Peel and wash the potatoes. Peel the zucchini, onion and carrot. Grate everything (potatoes, zucchini, onion and carrot) with a kitchen grater. Peel and finely dice the garlic clove and ginger. All ingredients (250 g pork meat and grated potatoes + zucchini + carrot + onion and garlic clove cubes + ginger cubes + 1 egg and medium hot mustard + ½ teaspoon mild curry powder + ½ teaspoon sweet paprika + 2 big pinches of coarse sea salt from the mill + 2 big pinches of colored pepper from the mill) into a bowl. Mix / knead everything well and let rest for 15 minutes. Shape meatballs (approx. 10 pieces), roll in breadcrumbs and fry in a pan with sunflower oil (8 tbsp) until browned. Keep warm in the oven at 50 ° C until serving.

Sweet Corn:

  1. Heat the butter (1 teaspoon) in a small saucepan, sprinkle with powdered sugar (1 teaspoon), caramelize a little and add the corn. Let everything simmer for a few minutes, deglaze with the cooking cream (2 tbsp) and season with coarse sea salt from the mill (2 big pinches) and colored pepper from the mill (2 big pinches).

Mashed potatoes:

  1. Peel, wash and dice the potatoes. Cook the potato cubes in salted water (1 teaspoon salt) ground with turmeric (1 teaspoon) for about 20 minutes, drain through a kitchen sieve and return to the hot saucepan. Add butter (1 tbsp), cooking cream (2 tbsp), coarse sea salt from the mill (2 big pinches), colored pepper from the mill (2 big pinches) and freshly grated nutmeg (1 big pinch) and work through well with the potato masher / stamp through.

Serve:

  1. Serve 2 minced vegetable meatballs with sweetcorn and mashed potatoes, each garnished with a small tomato.

Tip:

  1. The rest of the meatballs will taste good later both cold and warm.
