Delicious vegetable wok with mie noodles and smoked tofu

Ingredients for 4 persons

  • 100g Mie noodles
  • 1 bell pepper, yellow
  • 1 pepper, red
  • 2 chilies, red
  • 1 bunch of spring onions
  • 1 vegetable onion
  • 1 large tomato
  • 100g bean sprouts
  • 200g tofu, smoked
  • 1 tsp sesame oil
  • 3 eggs, whisked
  • Salt pepper
  • 1 curry paste, yellow
  • 2 tbsp soy sauce
  • 1 tablespoon sugar, brown
  • 1 tbsp peanuts
  • 1 tbsp cashew nuts
  • 100ml chicken stock or broth

Preparation

  1. Soak the mie noodles in warm water for 2 hours.
  2. Remove the cores and partitions from the peppers and chilies. Cut the peppers into even strips. Finely dice the chilies.
  3. Remove the ends of the spring onions, and cut the rest into fine rings. Peel the onion and finely dice it together with the tomato. Rinse the sprouts well with water.
  4. Dice tofu and sauté in sesame oil. Add eggs and let scramble. Add the peppers, chili, onions, tomatoes, and sprouts and sauté until hot. Season with salt and pepper.
  5. Add the curry paste and soy sauce with sugar and nuts and stir through.
  6. Drain the mie noodles in a sieve and place in the wok. Mix everything vigorously and deglaze with broth or stock. Heat up again and set aside.
