Ingredients
 

For the classic variant:

  • 200 g Wholegrain rye flour
  • 200 g Wholemeal spelt flour
  • 21 g Yeast fresh
  • 1 tbsp Sugar
  • 100 ml Milk lukewarm
  • 100 ml Lukewarm water
  • 50 g Margarine or butter, soft
  • 1 Pc. Egg
  • 1 tsp Salt

In addition:

  • 1 Pc. Egg yolk
  • 2 tbsp Milk
  • Sesame seeds

Vegan variant without yeast:

  • 200 g Whole grain rice flour
  • 150 g Brown millet flour
  • 100 g Red lentil flour
  • 50 g Flaxseed crushed
  • 1 tsp Salt
  • 1 packet Baking powder
  • 1 tsp Baking soda
  • 2 tbsp Psyllium husks
  • 1 tbsp Chia seeds
  • 1 shot Apple Cider Vinegar
  • 250 ml Plant milk
  • 250 ml Mineral water

Instructions
 

  • Those who make burgers themselves like to make burger buns themselves. This way you have the ingredients under control and can bake healthy variations. For that there are different possibilities. We present two recipes: The first variant is a classic bun recipe, but with wholemeal flour, the second recipe is vegan and without yeast. If you have a Thermomix at hand, you can use it for the dough.

The original:

  • For the yeast mixture, crumble the yeast. Add milk, water and sugar and stir until smooth. Let rest for about 10 to 15 minutes.
  • Mix the two types of flour with salt in a bowl. Add the butter or margarine, the egg and the yeast milk. Knead into a smooth dough by hand or with the help of a food processor.
  • Cover and let rise in a warm place for 2 hours until the volume has increased significantly.
  • Knead the dough, divide into 8 portions and shape into balls. Place on a baking sheet lined with baking paper and let rise for another 30 minutes.
  • Preheat the oven to 200 ° C (top / bottom heat).
  • Whisk egg yolks with milk for a nice surface. Brush the buns with it, then sprinkle with sesame seeds.
  • Put in the oven and bake for 16 to 20 minutes.

Vegan variant without yeast:

  • Mix flea and chia seeds with 150 ml water. Let it soak for 10 minutes.
  • Preheat the oven to 200 ° C top / bottom heat.
  • Mix whole grain rice flour, brown millet flour, red lentil flour, ground flaxseed, salt, baking powder and baking soda.
  • Add the rest of the water along with apple cider vinegar and vegetable milk. Add the flea and chia seed mixture and mix everything into a dough.
  • Dust the baking sheet and hands with a little rice flour and shape the dough into round rolls. Bake for 20 to 25 minutes.
