For the dough:

  • 800 g Wholemeal spelt flour
  • 1 packet Dry yeast
  • 2 tsp Salt
  • 550 ml Warm water


For the dough

  • Put the flour in a bowl.
  • Add the dry yeast and mix.
  • Add salt and warm water and knead everything well.
  • Let the dough rise for several hours.
  • Knead the dough well again and place in a floured cast iron saucepan.
  • Sprinkle the dough with flour and score twice with a knife.
  • Place the pot with the lid in the preheated oven.
  • Bake with a lid at 230 degrees top and bottom heat for 30 minutes.
  • Remove the lid and bake for another 15 minutes at 200 degrees top and bottom heat without the lid.
