Spicy Vegetable Pancakes with Beef Fillet Tips, Garlic-rosemary Potatoes

Ingredients

  • 1 kg Beef fillet
  • 4 Pc. Carrots
  • 250 g Mushrooms
  • 250 g Snow peas
  • 5 Pc. Shallots
  • 6 Pc. Paprika
  • 500 g Small potatoes
  • Rosemary
  • Garlic

Instructions

  • Clean and finely chop all the vegetables (carrots, mushrooms, snow peas, shallots, paprika, chilli), chop fresh garlic, clean the potatoes and then cut the fillet of beef into small pieces.
  • Emperor peas in boiling water for 5 minutes, then quench in ice water.
  • Boil the potatoes in salted water for a maximum of 10 minutes, then drain and place in a hot pan. Season with rosemary and chopped garlic, season with salt.
  • Sear the carrots in butter, then add the bell peppers, snow peas, shallots, chilli and mushrooms. Season to taste with sour cream, soy sauce and a little vegetable stock.
  • Sear the beef fillet, season with pepper and cayenne pepper. Only add salt at the end!
