Curd Dumplings with Goat Mountain Cheese in Wild Garlic Sauce

Dumplings
- 400 g Curd cheese / quark
- 20 g Potato flour
- 50 g Goat cheese hard
- Salt and pepper
- 2 Pc. Egg yolk
- 2 tbsp Flour

- 70 g Onion
- 30 g Wild garlic fresh
- 150 g Cream
- Salt and pepper
Dumplings
Lay out a fresh kitchen towel and wrap the curd in it and squeeze it out well. Mix the goat cheese (alternatively Parmesan), egg yolk, potato flour and salt and pepper. Let it steep for 1 hour. Then form small dumplings and then dust all around with flour. Bring salted water to the boil and cook the dumplings in it for about 10 minutes. They are done when they go to the top.
Wild garlic sauce
Chop the onions and sauté them in olive oil. Braise the washed wild garlic with the onions. Pour in the cream and bring to the boil. Season to taste and then puree finely.
Put a dollop of sauce in the middle and add dumplings. Then decorate with grated goat cheese and melted butter.
