Green Spelled Biscuits

- 125 g Green spelt flour
- 125 g Wholemeal spelt flour
- 1 Egg yolk
- 125 g Margarine
- 110 g Sugar
- 1 packet Vanilla sugar
- 1 tsp Cinammon
Mix the margarine, sugar, vanilla sugar, egg yolk and cinnamon until frothy. Mix the two types of flour and stir into the dough spoon by spoon. Shape the dough into a roll and wrap in foil and place in the freezer for about 30 minutes (or chill).
Then cut the roll into slices and place the biscuits next to each other on a baking sheet lined with baking paper. Bake in a preheated oven at 200 degrees for about 15 minutes.
If you like, you can roll the rolling pin in brittle or desiccated coconut and then cut it into slices.
