Vegetarian: Fried Potatoes with Egg and Cream Spinach

Fried potatoes with egg
- Leftovers from boiled potatoes
- 6 medium Or jacket potatoes
- Oil for frying
- 1 half Diced onion
- 3 XL Farm eggs
- Salt and pepper
For the cream spinach
- 1 packet Thawed Spinach Tk
- 1 half Zweibel
- 0,5 cups Crème fraîche with herbs
- Salt and pepper
Fried potatoes with EGG
Cut the potatoes and put them in the hot fat, fry them until golden. Add the onion and toss well. Beat the eggs one by one in a cup and take the white "stuffed" out of there, then whisk the eggs well with salt and pepper and add to the fried potatoes.
Now you can either let the egg rest slowly, or stir everything well with a turner, which is faster.
