Vegetarian: Fried Potatoes with Egg and Cream Spinach

Servings: 2 people

Ingredients

Fried potatoes with egg

  • Leftovers from boiled potatoes
  • 6 medium Or jacket potatoes
  • Oil for frying
  • 1 half Diced onion
  • 3 XL Farm eggs
  • Salt and pepper

For the cream spinach

  • 1 packet Thawed Spinach Tk
  • 1 half Zweibel
  • 0,5 cups Crème fraîche with herbs
  • Salt and pepper

Instructions

  • It should be thawed and put in a saucepan. Sweat the onion in a little oil and add to the spinach, season with salt, pepper and stir in the crème fraîche with herbs.

Fried potatoes with EGG

  • Cut the potatoes and put them in the hot fat, fry them until golden. Add the onion and toss well. Beat the eggs one by one in a cup and take the white "stuffed" out of there, then whisk the eggs well with salt and pepper and add to the fried potatoes.
  • Now you can either let the egg rest slowly, or stir everything well with a turner, which is faster.
