Beef fillet
Sear the beef fillet in butter on all sides for about 10 minutes. Then drain the fillet well and season with salt and pepper. Cover the puff pastry with the spinach mixture. Wrap the fillet of beef well in the puff pastry so that no juice can leak out. Brush with the egg yolk and bake in the preheated oven for about 20 minutes at 180 ° C until the puff pastry is golden yellow.
