Zucchini and Tofu Skewers

Ingredients

  • 1 piece Zucchini green
  • 1 piece Zucchini yellow
  • 200 g Tofu
  • 1 piece Red onion
  • 2 piece Garlic cloves
  • 3 tbsp Olive oil
  • Salt and pepper
  • 1 tsp Paprika powder
  • 400 g Pieces of strained tomatoes
  • 1 pack Uncle Ben’s Express Long Grain Rice

Instructions

  • Wash the zucchini and cut into wide slices. Cut the tofu into slices similar to the zucchini. Put everything alternately on the skewers. Peel the onion and garlic. Cut the onion into wedges and the garlic into cubes.
  • Heat the olive oil in a pan and fry the skewers for 2 minutes. Turn more often and season with salt and pepper. Take the skewers out of the pan and fry the onions and garlic in them. Sprinkle everything with paprika powder and deglaze with the tomatoes. Put the skewers back in the pan and into the sauce.
  • Cover everything and let it simmer over a low heat for about 15 minutes. If necessary, add a little more water.
  • Heat Uncle Ben’s Express Long Grain Rice according to the instructions on the packet and serve with the skewers and sauce.
  • Tip 5: If you like, you can garnish and sprinkle everything with fresh parsley.
