Tomato Rice Salad with Mozzarella

Ingredients

  • 200 g Colorful cherry tomatoes
  • 1 piece Small red onion
  • 1 piece Clove of garlic
  • 1 handful Basil leaves
  • 0,5 handful Mint leaves or lemon balm
  • 2 tbsp Red wine vinegar
  • 1 tbsp Honey liquid
  • 3 tbsp Olive oil
  • 125 g Mini mozzarella balls
  • 1 pack Uncle Ben’s Express Rice Mediterranean
  • Salt and pepper to taste

Instructions

  • Wash tomatoes and cut in half. Peel and halve the onion and cut into fine strips. Peel and finely grate the garlic. Wash the herbs and pluck them roughly.
  • Put the vinegar, honey and olive oil in a bowl and stir. Add tomatoes, onions, mozzarella and herbs and season to taste with salt and pepper.
  • Heat Uncle Ben’s Mediterranean Express Rice according to the instructions on the packet, let it cool down briefly and carefully mix with the tomato and mozzarella salad and serve.
  • Tip 4: The rice salad can be refined with a little pesto.
