Avocado Papaya Lassi

Ingredients

To taste:

  • 100 g Papaya pulp, ripe
  • 300 g Whole milk
  • 100 g Yogurt, neutral
  • 3 tbsp Lime juice, fresh
  • 2 tbsp White sugar
  • 1 pinch Salt
  • 0,5 tsp Cardamom powder
  • 1 tsp Vanilla extract
  • Lime juice and sugar

To garnish:

  • Papaya cubes
  • Saffron threads
  • Flowers and leaves

Instructions

  • Yogurt and pulp should be as cold as possible. Cut a ripe avocado around the hard core and spoon out the pulp. Wash, peel and halve the papaya lengthways and remove the grains. Cut the pulp into walnut-sized pieces. To garnish, cut 2 tablespoons of the pulp into small cubes.
  • Put all ingredients in the blender and puree for 1 minute at the highest level until foamy and season to taste. Pour into sufficiently large glasses, garnish and serve with a drinking straw and long teaspoon.
